Beef Skewers with Greek Salad

Ingredients


  • Beef Skewer
  • 1 portion* beef sirloin steak, cut into 1 ½" cubes

  • 1 portabello mushroom, cut into 1 ½" chunks


  • Marinade
  • ½ tbsp apple cider vinegar

  • 1 tsp olive oil

  • 1 clove garlic, minced

  • 1 tsp dried oregano, plus more for garnishing

  • ¼ tsp tsp ground cumin

  • 2 tbsp red onion slices

  • 1 tsp salt, divided

  • Salad
  • 4 pieces red onion

  • 2 radishes, halved

  • ½/ orange bell pepper, deseeded and cut into 6 chunks

  • 6 cherry tomatoes

  • ¼ cucumber, cut into 6 chunks

  • 1 tsp olive oil

  • 1 wedge lemon, juiced)

Directions


  • Mix marinade ingredients together. Place beef and portobello mushroom in marinade. Toss to have marinade coat well and set aside while you prep the vegetable skewers.

  • Toss the salad ingredients together with ⅛th tsp salt.
    Set aside.
  • Preheat air fryer to 400°F. Skewer beef and mushrooms onto a skewer leaving the marinade and onions in the bowl. Spray with cooking oil spray.
    Season skewers with ⅛ tsp salt. Air fry for 5 minutes or until desired doneness.
  • To plate, place beef skewers on plate along with salad skewers.
